I'm trying to rework a ball for a beginner bowler that was finger tip but bowler just wants conventional. The bridge is blown own and it has been plugged previously.
After replugging again, I was thinking of using to 1 1/8" slugs for the finger holes for a better feel. Drill install 1, then drill install 2nd. Is this doable? Any reason not to try? I figure I can do a 1/4" bridge with the slugs and carefully install them, especially the 2nd one.

It can be done, but completely unnecessary. There won't be much feel difference between plug and slug if you do decide to drill into the plugged area.
The better option is to plug the ball and shift the layout down enough that the new finger holes will have ball material for the bridge.

Thanks, that was my other option. I think I'll just drill into the plug and if it feels funky use some black bowlers tape if needed.
